Vegetarian Lasagna

My family loves Lasagna I make it just about every week...

Before you start don't forget to pre-heat your oven to 350 and remove the rack.

Here's the Recipe:

1 large eggplant
2 medium onions
4 cloves of garlic
1 jar of your favorite spaghetti sauce
4 cups of mozzarella cheese
1tsp seasoned salt
1/2tsp black pepper
2T Italian Seasoning
1tsp crushed red pepper
2T Canola Oil
12-Uncooked Lasagna Noodles

First peel and chop the eggplant, onions, and garlic

Second saute' with oil and add all of the seasonings. Cook for about 5 minutes stirring several times.

Third in a glass baking dish pour enough sauce into the bottom of the pan to coat it so the noodles won't stick

Fourth add one layer of noodles than pour about 1 cup of sauce on them and spread it evenly.

Fifth pour your veggie filling into the baking dish and spread evenly over the noodles.

Sixth sprinkle 2 cups of cheese on top of the mixture

Seventh add another layer of noodles

Last Step: Pour the remainder of the sauce on top of the layers spread evenly than sprinkle the two remaining cups of cheese on top. Put your baking dish on the wire rack lower it into your oven and cook for 45 minutes to 1 hour. Just until the noodles are wavy and everything in the layers is bubbly.

Serving Size-yields 10 servings

$Cost$-Under $10.00 if you buy store brand or Generic items slightly higher if you use name brand.

Kid Friendly-4/4 we never have any leftovers with this meal.

Vegetarian Spicy Rice

Okay...so today is Sunday...NFL...Day!

My kids are bummed that the Lions game is blacked out but Oh well there's always other games to watch...

So Sundays are kind of casual family style meals...

I'm making vegetarian burrito filling in my slow cooker and spicy rice in the roaster oven...

Spicy rice is what my kids named it because it's slightly different from Spanish rice since there's no meat and as my grandma used to make it no olives.

Remember to pre-heat your oven at 350 and remove the rack when you get started.

It's really easy Here's the recipe:

2 cups long grain rice
2-14.5oz cans of chopped tomato's'
1-8oz can of tomato sauce
1T of chili paste
2-medium Spanish(yellow)onions chopped finely
1T canola oil
1-package of Taco Seasoning
1/2tsp salt and pepper

So first rinse your rice at least twice to remove all the extra starch.

Than chop and cook your onions, add the oil,salt,and pepper to an electric skillet or large stock pot and cook for 2 minutes stir often.

Than add your rice mix and cook until the rice turns white.

Than add all the cans and mix in the taco seasoning.

Reduce heat to simmer until almost all of the liquid is absorbed.

Than pour everything into a glass baking dish cover with foil, place it on the rack and put it in the oven and bake for 45 minutes.

Serving size- This will make enough rice for 8-10 servings.

$Cost$-If you by store brand/generic about $4.00 If you use name brand it might be slightly higher.

Kid Friendly-2/4 my kids all liked it and finished it but only my older ones came back for seconds.

Quick Vegetarian Enchiladas/Casserole

This meal can be made as enchiladas or as enchilada casserole. I made it tonight as casserole because I only had 1/4 of a bag of tortillas left in the package.

Either way it's super easy and Yummy...It's also a sneaky way to get your kids to eat more veggies'.

First before you start pre-heat your oven to 350 and take out the rack.

Here's the Recipe:

12 corn tortillas for casserole, or 24 tortillas for individual enchiladas'
1-30oz Can or Pinto Beans Drained
1-15oz can of Mixed Veggies' Drained
1-15oz can of chili beans not drained
1-15oz can of chopped tomato's with green chili's'
1-15oz can of chopped tomato's
2-8oz bags of your favorite cheese my family likes Monterrey and Colby best.
1-package of taco seasoning

In a mixing bowl mix everything accept the can of "Plain"-Chopped Tomato's, the tortillas, and one of the 8oz bags of cheese.

In your glass/metal baking dish that you have already checked to make sure fits in your oven...spread 1/2 of the can of plain tomato's out than place a layer of tortillas...or if you are making individual enchiladas fill, roll, and lay in rows over the tomato's in the baking dish.

Than for casserole pour all of the filling and spread evenly and place the remainder of tortillas over the filling.

Last but not least...pour the remainder of the plain tomato's over the top of your casserole or enchiladas and sprinkle the second 80z bag of cheese over the top evenly.

Place on the rack and in your oven and bake for 45 minutes.

Servings-12

Kid Friendly...3 1/2 out of 4 reviews. My son Noah hates Lima beans and how he managed to pick out the few Lima beans that were from the can of mixed veggies' and that were lucky enough to land in his piece of casserole I'll never know...It must have been fate! Other than that it would have received 4/4 kid reviews.

Super Easy Chocolate Chip Cookie Bars

These are a weekly item in our house they go great in sack lunches, for snacks, and last minute bake sale items...

Remember to preheat your oven to 375 and remove the rack before you start mixing!

I use my food processor to mix just about everything but you can use whatever you have at home. If you are camping or making this as a club cooking project and taking your oven on the road with you than a big mixing bowl and sturdy wooden spoon would be my best suggestion since it's easy for kids to use and safe.

Here's the Recipe:

1 cup butter

1/2 cup sugar

1/2 cup packed brown sugar

2 eggs

1tsp. baking soda

1tsp. salt

1 tsp. cinnamon

2 cups flour

1-12 oz package chocolate chips

*optional Ingredient*

1/2 cup of walnuts

Cream together everything accept the chocolate chips and walnuts...

After everything has been mixed well stir in the chocolate chips and walnuts using a wooden spoon.

Spread mixture into a glass/metal baking dish(ungreased) and bake for 25-30 minutes.

Servings Size...14-16

$Cost$....Less than $5.00 depending on if you buy Generic or Name Brand...Name Brand may push the cost closer to $8.00.

Kid Friendly...ha ha...are you kidding me...4/4 since I have 4 kids and they love them...it's hard to keep the from sneaking back for thirds and fourths!

About Roaster Ovens

Did you know Roaster Ovens are Energy Efficient....

It's true they use about 75% less energy than your full size oven...probably because they are smaller.

But when you're on a budget counting pennies...75% less energy spent on cooking is a good thing.

Quick Chocolate Cake

My kids love dessert sometimes I wonder if in their point of view it is the most important part of the meal?

This recipe is super quick it takes less than 10 minutes of prep time and depending on what size of baking dish you choose for your cake it should bake in just under an hour.

Pick whatever cake mix your family likes...my kids love chocolate so I just pulled out a Devils' Food cake mix from my pantry.

Follow the mixing and pre-heating directions on the box.

Again, make sure you pre-heat your oven when you start the mixing process as well as checking to make sure your baking sheet/Cake Pan will fit into the roaster oven.

Grease your pan with either bakers cooking spray or butter and a dusting of flour.

Pour the mix into the baking dish, place dish on the wire rack and lower it into the oven.

Cook for the recommended time on the back of your cake box at the recommended temperature.

Your cake will come out super moist...When I made mine I didn't even use frosting and the kids loved it...without all the added sugar.

If I was making this for guests I would still leave off the frosting...Instead I would gently sift powdered sugar over the top and ad some fresh berries around the edges of the platter and a few on top for presentation.

Serving Size...12-14 if you use the larger baking dish and make it as a sheet cake.

Total Cost...Less than $5.00 depending on what type of berries you choose.

Kid Friendly...4/4 since I have four kids and they all loved it and came back for more.

Tuna Noodle Casserole

Okay on Important note about any kind of baking dishes that go into your electric Oven...Make sure they fit on the rack and in the oven before you get started!...LOL...I speak from experience!



Also, always pre-heat your oven for at least 10-15 minutes before using...



Well...I made this last weekend and the thought never crossed my mind to take a picture of it but I'll try to keep the camera handy for future recipes.



Total Meal $Cost$...Less than $10.00



Amount of Servings...10



Kid Friendly-4/4 rating....since I have 4 kids and they all loved it and came back for seconds.



Here's the recipe...



*PreHeat your oven to 350



2 large bags of egg noodles

8 cups of milk

1 can of cream of mushroom soup

4 cans of solid white tuna in water drained

1 can of small peas drained

3 cups of colby cheese grated

3 cups of mozerella cheese grated

1 T season salt

1tsp black pepper



So in an electric skillet or large stock pot combine noodles, milk, soup, and seasoning. Cook about 7 minutes until noodles are soft but not cooked fully.



*When cooking with milk don't cover the pot or skillet stir frequently to prevent bubbling over.



Turn off/Remove from heat.



Mix in 2 cups of colby and 2 cups of mozerella cheese as well as the can or peas and cans of tuna.



Spray baking dish with cooking spray or greese with butter, and pour everything into the baking dish...Sprinkle the remaining grated cheese on Top.



Place Baking Dish on Wire Rack and lower with Pot Holders into your roaster oven Put the lid on and bake for 45 minutes.



Let stand for 15 minutes before serving.
