Vegetarian Lasagna

My family loves Lasagna I make it just about every week...

Before you start don't forget to pre-heat your oven to 350 and remove the rack.

Here's the Recipe:

1 large eggplant
2 medium onions
4 cloves of garlic
1 jar of your favorite spaghetti sauce
4 cups of mozzarella cheese
1tsp seasoned salt
1/2tsp black pepper
2T Italian Seasoning
1tsp crushed red pepper
2T Canola Oil
12-Uncooked Lasagna Noodles

First peel and chop the eggplant, onions, and garlic

Second saute' with oil and add all of the seasonings. Cook for about 5 minutes stirring several times.

Third in a glass baking dish pour enough sauce into the bottom of the pan to coat it so the noodles won't stick

Fourth add one layer of noodles than pour about 1 cup of sauce on them and spread it evenly.

Fifth pour your veggie filling into the baking dish and spread evenly over the noodles.

Sixth sprinkle 2 cups of cheese on top of the mixture

Seventh add another layer of noodles

Last Step: Pour the remainder of the sauce on top of the layers spread evenly than sprinkle the two remaining cups of cheese on top. Put your baking dish on the wire rack lower it into your oven and cook for 45 minutes to 1 hour. Just until the noodles are wavy and everything in the layers is bubbly.

Serving Size-yields 10 servings

$Cost$-Under $10.00 if you buy store brand or Generic items slightly higher if you use name brand.

Kid Friendly-4/4 we never have any leftovers with this meal.

Vegetarian Spicy Rice

Okay...so today is Sunday...NFL...Day!

My kids are bummed that the Lions game is blacked out but Oh well there's always other games to watch...

So Sundays are kind of casual family style meals...

I'm making vegetarian burrito filling in my slow cooker and spicy rice in the roaster oven...

Spicy rice is what my kids named it because it's slightly different from Spanish rice since there's no meat and as my grandma used to make it no olives.

Remember to pre-heat your oven at 350 and remove the rack when you get started.

It's really easy Here's the recipe:

2 cups long grain rice
2-14.5oz cans of chopped tomato's'
1-8oz can of tomato sauce
1T of chili paste
2-medium Spanish(yellow)onions chopped finely
1T canola oil
1-package of Taco Seasoning
1/2tsp salt and pepper

So first rinse your rice at least twice to remove all the extra starch.

Than chop and cook your onions, add the oil,salt,and pepper to an electric skillet or large stock pot and cook for 2 minutes stir often.

Than add your rice mix and cook until the rice turns white.

Than add all the cans and mix in the taco seasoning.

Reduce heat to simmer until almost all of the liquid is absorbed.

Than pour everything into a glass baking dish cover with foil, place it on the rack and put it in the oven and bake for 45 minutes.

Serving size- This will make enough rice for 8-10 servings.

$Cost$-If you by store brand/generic about $4.00 If you use name brand it might be slightly higher.

Kid Friendly-2/4 my kids all liked it and finished it but only my older ones came back for seconds.
